[kotlin-spring] Escape quotes in example of array type property

Escape quotes in example of array type in Schema and ApiModelProperty annotations

In #10046 (closed) it was reported that the generator kotlin-spring generates invalid code when Swagger annotations are activated and you have a property in a schema that is of type array and has an example. Please see the issue for more details, also on how to test the fix.

The problem in the generated code was missing escapes in quotes of example-property in @Schema and @ApiModelProperty annotations.
