[CI] try to fix bitrise deprecation warning #14834

(based on https://github.com/OpenAPITools/openapi-generator/pull/14834 and included commits to skip builds of openapi-generator, which takes a long time)

Try to fix bitrise warning This workflow is using a deprecated stack. Change your build stack, or your builds will not work after Mar 13

PR checklist

• File the PR against the correct branch: master (6.3.0) (minor release - breaking changes with fallbacks), 7.0.x (breaking changes without fallbacks)
• If your PR is targeting a particular programming language, @mention the technical committee members, so they are more likely to review the pull request.
